The 2019 vintage produced beautifully ripe fruit which was destemmed and cold soaked for 5 days, then inoculated with selected yeast strains. Over two weeks the grapes were plunged 3 times a day in an open vat. After pressing, the wine was racked and underwent malolactic fermentation. The wine was aged for 6 months with French Oak, then filtered and bottled. Bright ruby garnet in colour with aromas of dark cherry and subtle French oak. Medium bodied and fresh, the palate has dark berry and savoury characters, fine tannins and a delicious balanced finish.Will benefit from decanting, pair with red meats and game.
