The 2020 vintage produced beautifully ripe fruit which was destemmed and cold soaked for 5 days, then inoculated with selected yeast strains. Over two weeks the grapes were gently plunged 2 times a day in an open vat. After pressing, the wine was racked and under went malolactic fermentation. The wine was aged for 10 months with French oak puncheons and barrels then filtered and bottled.
Ruby red in colour, first impressions lead to a soft and elegant Pinot Noir. Cherry and plum flavours give way to more savoury aromas paired with hints of dark chocolate and tasty vanilla notes. The clean fruitiness and complex savoury aromas stay present, all wrapped in a soft tannin structure, with a long fruit driven finish. Try this with game or red meats, or just a sipper by the fire to relax after a busy day.
